The Xinomavro grapes are sourced from select vineyards in Naousa and Amyntaio, both in Macedonia. Naousa lies 330 metres above sea level in limestone and clay-rich foothills, while Amyntaio sits at 580 to 650 metres in a cooler climate. Vines are trained using methods that suit the variety and terroir, with most in Double Cordon to control yields and concentrate flavours. The oldest vines, over 90 years old, use the Gobelet method. While not certified, most vineyards follow organic practices, and all grapes are hand-harvested at night to preserve freshness.
After sorting and a short cold soak, fermentation occurs slowly with wild yeasts in 31 hl tulip-shaped concrete tanks, with a small portion in 5 hl open-top barrels. Around 5-8% of the grapes ferment as whole clusters, adding structure and complexity. The wine is blended immediately after fermentation, then aged for 10 months on fine lees in amphorae. It is bottled unfiltered to maintain its natural character and elegance.
