The Limniona grapes are sourced from the mountainous areas of Karditsa, in Greece’s Thessaly region. The climate here is shaped by the region’s inland location, right in the heart of mainland Greece. Higher elevations bring a continental climate with significant temperature fluctuations between day and night, as well as across the seasons. The vineyards, planted between 600 and 1,000 metres, experience dramatic temperature drops at night, which helps preserve natural acidity and enhance the cool-climate red fruit characteristics. Vines are trained using a range of methods, with most employing Double Cordon to reduce yields and focus the flavours in the fruit. While the majority of vineyards follow organic practices, they are not officially certified. Grapes are hand-harvested at night to ensure freshness.
The early harvest preserves the natural acidity and vibrant fruit aromas. Fermentation occurs with wild yeasts in amphorae and 500-litre French oak barrels. The wine is aged on its fine lees for nine to ten months in a blend of concrete tanks, stainless steel tanks, amphorae, and around 20% in large fourth-use French oak barrels.
